When You’re Too Tired to Cook: Kale, Apple & Goat Cheese Salad

Last week was one of those weeks where I didn’t get home from work until late almost every night. By Thursday I was so exhausted and the thought of cooking anything made me that much more tired. Knowing that I had a fridge full of greens I needed to use, I forced myself to make a quick and hearty salad (I had come from a killer training personal sesh that left me STARVING). This is probably the least fancy, least inspired salad I’ve made to date; however, it hit the spot big time and it super fitting given our fall weather. It also forced me to use what was in the house, and not give in to ordering delivery (which let’s face it, is always the healthier option and usually the cheaper one as well). If you’re ever in one of those moods or have had one of those days, this is a super easy and quick dish to throw together. It’s also really filling- although there’s no harm in throwing a chicken breast on top if you have one readily available or need the protein. Hope you enjoy! Bon appetit!

Ingredients:

1-2 cups organic baby kale
1 small apple, diced (I used a cortlandt but any apple will do)
⅛ cup apple juice sweetened dried cranberries
¼ cup pecans, chopped
1 Tbsp goat cheese
1/4 avocado, sliced
1-2 Tbsp balsamic vinaigrette

Instructions:

Dice apple. In a large mixing bowl, combine kale, pecans, apple, cranberries and dressing (I used a bottled dressing because I was too tired to make one, but you can use any dressing of your choice). Toss until evenly coated. Plate. Top salad mixture with slices of avocado and goat cheese. Serve and enjoy.
